Buckshot Honey barbecue restaurant officially opens in Snoqualmie, July 29th

Well, it took a little bit longer than anticipated, but it looks like Snoqualmie’s newest restaurant – Buckshot Honey – is open.

The restaurant is doing a soft opening this weekend and then opens full-time on Wednesday, July 29th. Hours are 11AM – 8PM, Wednesday thru Sunday.

ORIGINAL STORY

The timing for opening a new restaurant wasn’t exactly what Chef Dave Storm signed up for, but regardless of the coronavirus pandemic and the statewide stay home order, a new barbecue spot – Buckshot Honey – is coming soon to downtown Snoqualmie.

Many residents have noticed work going on inside the historic brick building at the corner of River Street and Falls Ave – formerly home to Heirloom Cookshop – as Dave works to give the space a relaxed feel.

He hopes to open for takeout in mid to late May if the state’s stay home order remains in place – and for dine-in seating in early June if the order is lifted. [He’ll adjust as needed based on state rules.]

Currently Buckshot Honey is still waiting on some permitting, but Dave hopes to have those all in place soon. He’s also carefully planning for social distancing (proper table spacing) and safety procedures (washing stations and ample sanitizer) when the restaurant opens.

Dave has worked as a chef in Seattle for the past 20 years and three years ago moved to North Bend. He said his aunt lived in the Snoqualmie Valley and feels like he’s been working his whole life to settle here.

He’s a guy with a passion for barbecue. Dave said cooking what he’s passionate about is something that makes him and his family happy. He also loves the century-old tradition of using family recipes that have been passed down for generations – and so will focus on that at Buckshot.

The restaurant will have a community feel to it. It will be open with community tables – with a ‘kitchen in the dining room’ feel to it. Patrons will walk in, order food at the counter, grab a drink at the full bar and find a seat to enjoy the meal. The upstairs area of the former bank building will also provide seating.

Buckshot Honey will have a smoker in the parking lot – where a lot of the barbecue magic will happen using apple wood. And it will be a smoker large enough to fit a whole pig, according to Dave. Meat will be sourced from a company called Pure Country in Moses Lake.

Don’t expect Buckshot Honey to be focused on one specific, geographical barbecue style. Dave will bring his own recipes, offering a variety with his personal stamp – complete with house made sauces.

The interior will have a local stamp, too. Dave hired Eureka, CA painter Benny Wright to create artwork for the walls based on photos of Snoqualmie sent to him. They’ll be displayed in light boxes to produce ambiance during nighttime hours.

The Buckshot Honey website hasn’t launched yet, but hours are anticipated to be 11AM – 12PM, Sunday and Tuesday – Thursday; and 11AM – 2AM, Friday and Saturday.
